Caviar for the Connoisseur The Premiere Gourmet Delicacy When you think about the most expensive and exquisite food delicacies in the world, probably the first thing that comes to mind is Russian caviar. In old Russia, caviar was reserved for the tsar's table, but today it is served at the finest restaurants as a delicious appetizer and stocked, properly chilled, in the gourmet home pantries of connoisseurs. Caviar is the most nutritious fish product available. But with only 270 calories per 100 grams, caviar is not a high-calorie food. That amount of caviar is, however, rich in protein (25.3 grams), fat (17 grams) and cholesterol (440 mg), while it also is low in sugar (4 grams). It also has a high content of minerals (1,700 mg sodium, 164 mg potassium, 330 mg phosphorus, and 51 mg calcium), along with ample amounts of vitamins D, A, C, B2, B44, and B12. The recommended portion is from 30 to 50 grams of caviar per person. Russian caviar maintains the premiere position on the international market as the finest, most delicate, and most expensive caviar. The most prized and sought-after caviars are Beluga, Osetra, and Sevruga, – named for the three respective varieties of sturgeon. The fish and their eggs are harvested from the northern part of the Caspian Sea, which comprises some of the least polluted and most environmentally safe waters of that great body of water. Many consider Iranian caviars, from the same sturgeon fish varieties but harvested in the southwestern shores of the Caspian, to be equally as good. They are second only to Russian brands in popularity. But there are other types of caviar for your gourmet pantry as well. Because Caspian Sea sturgeon fish have been negatively affected in recent years by over-fishing, illegal trade, habitat loss, and pollution, caviar varieties produced from sturgeon and paddlefish farmed in the United States have gained favor, particular among those with concerns about the environment. These less costly caviars have performed quite well in taste tests by culinary experts. Caviar is a perishable food that should be stored at around 28-36 degrees F, then placed at room temperature for 15 minutes just before serving. Experts say it should be served surrounded by ice with a suitable utensil of gold, wood, mother-of-pearl, or horn -- but never silver, which alters the taste of caviar. The best way to fully appreciate caviar is to taste a small quantity, allowing the grains to burst in the mouth to release their delicate flavor. For the true connoisseur, all accompaniments (pepper, lemon, onion and herbs) must be banished from the table. According to Russian tradition, iced white vodka is the perfect accompaniment, but caviar is also delicious with dry champagne, so stock these items in your gourmet pantry as well. Like other luxury products, caviar has been often imitated, but other similar fish products are not “the real thing.” By law, the word "caviar" alone cannot appear on a label for anything other than sturgeon eggs. Other fish roe must be qualified with the name of the fish (salmon, lumpfish, etc.). When shopping for premium caviar, it is advisable to purchase a brand name product from a reputable caviar dealer.
